Resumo
The expenditure with foods of the Brazilian families have been affected by the alterations in the income and its distribution, the relative prices of the goods and by other structural transformations occurred in the Brazilian society, among which can be cited those associates with the urbanization and the life style, the demographic changes and the composition of the families, the educational level and the sex of the head of the family. The main objective of this work is to estimate the income elasticity for thirty-nine alimentary products, from aid (Almost Ideal Demand System) model with quadratic expansion for per capita familiar expenditures. The database used was the consumer expenditure survey Pesquisa de Orçamentos Familiares (POF), 1995/1996 of IBGE (Brazilian Institute of Geography and Statistics), which has extremely detailed information on the alimentary consumption of the families of the eleven bigger Brazilian urban regions. The variables used in the estimation of the model had been gotten directly of the micro data of this survey. This procedure allowed that the logarithms of the prices of food and the monthly per capita familiar income were directly calculated from the individualized observations, and not from the aggregate data of original income strata of the POF. The results allow deepening the knowledge on the differences of the consumption standards among the diverse income strata, as well as between distinct regions as Southeastern and South and the Brazilian Northeast. It was demonstrated that there is an insufficiency in the domiciliary food consumption in Brazil and that such fact is concentrated in the low-income families, in which the expenditure with foods represents the biggest share of the budget.
