A diminuição do consumo de feijão no Brasil

Resumo
A substantial reduction in the per capita consumption of beans in Brazil has been observed in the last two decades. This paper shows that a major part of this reduction is due to the urbanization of the population. However, the consumption of beans has also decreased in the urban areas. The income elasticity ofbeans is shown to be near zero. There is enough evidence to conclude that the reduction in the consumption of beans is associated with changes in the eating habits of the Brazilian population.
